Thymiopoulos – Xinomavro

Appearance

Deep red with some paleness around the edges, reminiscent of a Pinot Noir in the glass.

Nose

• On the nose is aromas of dark fruits, fresh tobacco and black olives.

Taste

• The palate is bold and tannic with a strong structure, with notes of black cherry, plum and baking spices with a little tobacco on the finish.

This wine is made with minimal intervention and biodynamic practices. Guinea fowls and turkeys roam the vineyards to control pests and negate the need for herbicides. Fermentation is done with wild yeast, and the wines are bottles unfiltered with minimal sulphur use.

Thymiopoulos

• The Thymiopoulos family have been growing grapes in Naussa for several generation. However, it wasn’t until Sergios, the father of current winemaker Apostolos, that the family began to sell grapes to local wineries. Then Apostolos took the next step to make wine under their own family name in 2005. The families’ old vines helped immediately build their reputation for making quality wines. Over the years Apostolos has worked hard on making the vineyard as eco-friendly as possible, working with Biodynamic process to ensure the minimal use of herbicides and pesticides.
