After travelling extensively in Portugal and Austria learning his craft Craig Hawkins returned to South Africa and became the winemaker at top Swartland estate Lammershoek. Craig now makes his own wines from various small, organic vineyard sites in Swartland and makes his wine naturally, with as little intervention as possible. Craig and Carla prioritize the pursuit of purity, precision, and vibrancy in their wines, exclusively collaborating with vineyards capable of yielding top-quality grapes with a relatively low pH, minimizing the necessity for cellar interventions. They are committed to maintaining herbicide- and pesticide-free vineyards, opting for cover crops over chemical fertilizers during the winter to enhance moisture retention and overall soil health in the arid Swartland climate. The essence of the vineyard is paramount; thus, all their wines are crafted from a single grape variety grown in a single location.
In the winery, no yeast, enzymes, or acids are introduced. A minimal amount of SO2 may be added prior to bottling. Vinification: Grapes are harvested by hand and whole bunch fermented. Grapes are crushed and then fermented for 10 days. Matured in French oak casks. The wine goes through malolactic fermentation before being bottled unfined and unfiltered with a very small amount of sulphur added before bottling.
