Nose
- On the nose we fine and expressive aroma of lemon citrus, yellow and golden apple, white flowers and a touch of nectarine.
Taste
- The palate is well balanced and super complex, showing off the best of each grape. Flavours of candied lemon peel, green apple, honeyed oats and biscuit.
This non-vintage wine is made with grapes from the Cru’s of Cramant, Ay and Bouzy. The traditional method is used with 3 years spent on lees before an extended aging in cellar. A super low dosage ensure this dry Champagne is great for any occasion and palate.
Champagne Ayala
- Founded near the town of Ay in 1860 by Edmond de Ayala, he was the son of a Colombian diplomat, his name being so close to the town name is apparently pure coincidence. He settled in the town after falling in love with Gabrielle d’Albrecht who’s family owned the Château d’Aÿ and its vineyards. Traditional French Champagne was made demi-sec. Edmond saw that the English market was calling out of a drier drink and thus broke the trend of modern style Brut Champagne. In 1882 Ayala was a founding member of today's Union des Maisons de Champagne. The Chateaux holds a royal warrant gifted to them by King Edward VII. After the wars the House saw a downturn in luck before being bought by Bollinger in 2005. Today the house has returned to its heyday of making quality wines with consistency and great taste.
